If that's what people meant by difficulty, then yes, if you're playing on the hardest difficulty, you're expected to use your knife or just run more than if you're playing on normal... a good technique that I and I'm sure a lot of other resident evil players use is to knock them down then run. There are no ammo/herb drops in the main game, just like the original resident evils. However, I can agree that at the moment the difficulty is ramped up a little high in regards to ammo, so there will be more ammo available later. Considering the size of this first chapter though, I don't think it's too much of an issue, and I'm thinking about whether to introduce the shotgun before the first boss or near the start of chapter 2.

That first glitch I've had as well, I'm probably just going to completely redo the saving thing again, since I've currently been having it freeze the game a lot.
Well the knife was always an extremely difficult weapon to use, a technique I have for using it is run at zombies, run away when they do the lunge animation, then return when they're recovering from the lunge.

no you cant aim down yet, we havint made sprites for aiming up and down, we'll get to that when we get more important things done but no you can only aim 1 way
