Jon knows who he's up against, at least to some extent; he knows that her first move is either going to be a swift flurry of combos to whittle down his guard, or trying to bait him into making the first move. He knows Shirogami's pros and cons, however, and that his general offense is rather weak, so attacking first with him would be suicide. That said, he's facing the legendary FallingStar, and she's likely prepared for him to try drawing her in...so, he makes a bit of a gamble...
Jon begins by dashing forward, as if he's intending to strike first. The moment he sees that she's within striking distance, however, he jumps into a short hop, and takes an airborne guard stance. When on the receiving end of a bum rush, Nosferatti's powerful uppercut is the most practical counter-attack. On top of that, Nosferatti's only attacks that can reach the middle hit-zone (where the airborne guard is vulnerable) are all heavy knock-back attacks, which will allow him plenty of distance to recover and resume guarding. If she tries to uppercut, he will simply block and counter; if she slams him in the mid-zone, he'll take some damage, but the primary threat of her combo-rush attacks will still be void.
